Handbrake will enable you to turn your DVDs into .m4v files for your iPod or iPhone. I do it, I even copy episodes of television seasons that I have purchased. The real problem is that the software circumvents the copyright restrictions on the disk itself in order to make that copy. Basically: Every time you do that you violate the DMCA.
Granted, if you're worried about legality you can re-purchase the content from the iTunes Music Store but I don't think that should be, or is, necessary. If you need some advice on using handbrake let me know, because its an intimidating piece of software at first glance.
