Identify this chant for me?

I was wondering if someone could identify the specific text being chanted solo at the beginning of this video?

Incidentally, where do these different styles of chant come from? How does one learn them?

This [Maybe someone else can help you with the chanting style although the text also comes with what looks like marks for a chanting style]

The chanting is being led by Ajahn Sucitto, who is the abbot of Chithurst monastery in the UK. It is an adapted Thai style.

This is certainly the text for the beginning chant, but why does it only match partially? The youtube version begins differently.

And as a side curiosity, in the video I posted, why does this phrase occur at 05:12mins? Does anyone know?

‘Om’ is composed of the sounds a, u and m, which in certain late-Pali verse compositions serve as mnemonics for Saṅgha, Buddha and Dhamma respectively.

Ajahn Siripanno calls down the devata (the beginning) but Ajahn Sumedho is leading the paritta chanting in this second clip (calls the first line of each paritta).
