As a person who just converted to Buddhism and a new member, I need some answers to some questions I have.
(i) How can I procure the Pali canon? I want to read the entire thing cover to cover, given I love reading. Preferably a translation. I don't know Pali as of yet.
(ii) Is there a Theravada meditation center in Montreal? If so, where is it?
(iii) How can I a learn and practice meditation in this epidemic situation?

ii) Sorry, don't know that one, but if there is, Googling should bring it up.
iii) Online. There are hundreds of different videos and audios (and probably now a few live sessions via Zoom, etc.) and your biggest problem will be sifting through them to see if they suit you.

It's bigger than you might think - more like a library than a book.

Meeting and practising with a teacher and group in real life is hugely important in keeping your practice grounded but that may have to wait until the pandemic settles down. If any of the online groups or teachers are local to you, at least give them a try now, so that you will have continuity of practice and a personal connection to build on later.(ii) Is there a Theravada meditation center in Montreal? Watch the video "A short introduction to Buddism" by Bhikkhu Bodhi
Read Buddhism course. (Take about 12 hours to read and give you a good idea about the teaching)

(iii) I would suggest making contact now with some of these centres, they might be able to offer some online resources while pandemic measures are in place.
